The Mormon Bachelor Update

I was very flattered when Erin Elton, the show producer, emailed me and asked if they could feature me on their official blog. They feature a new girl everyday until the show begins. Diet Cookies?

Yes. They do exist.......sort of.

Lately I've been really tired despite my early to bed early to rise routine. I have been working out every morning with my roommate and Jillian Michaels and even though I feel a lot better physically that still didn't help fix the problem. So, after a few weeks of thought, I came to the conclusion that my diet must be to blame for my lack or energy.

I LOVE food and I love to eat! My mentality has been that since I am working out I'll lose weight no matter what or how much I eat. Wrong! I stayed the same weight and didn't get any more energy. Then 2 weeks ago I had an epiphany. I took a blood allergy test a few years ago and learned that I was mildly allergic to a few minor things like wheat, dairy, gluten and GARLIC (my all time favorite spice) and so I decided that if I cut those things out of my diet it might help me feel better and have more energy. And so far so good.

For the past 2 weeks I have done my best to steer clear of wheat, dairy, gluten and garlic, which turns out is easier said than done because garlic is in EVERYTHING, and I can definitely feel a difference. But today at work, I daydreaming of desserts and I had to do something to make those dreams a reality. So I decided to find a recipe for cookies that I could potentially doctor up to fit my diet specification and I found a pretty good recipe.

Whole Wheat Oatmeal Chocolate Chip Cookies

(I'm sorry this is not a prettier picture with a more beautiful arrangement of the cookies, but you get the idea)

Ingredients:
1/2 C butter (I used Crisco to make them dairy free)
1/2 C unsweetened apple sauce
1 C packed brown sugar
1/2 C white sugar
2 eggs
2 tsp vanilla
1 1/4 C whole wheat flour (I used spelt flour)
1/2 tsp baking soda
1 tsp salt
3 C quick-cooking oats
1 C semisweet chocolate chips (I used a mixture of special dairy free chocolate chips and extra dark chocolate chips)

Directions: 
Preheat oven to 325 degrees.
Cream together butter (or crisco), apple sauce, brown and white sugar until smooth.
Beat in eggs one at a time, then stir in vanilla.
Combine flour, baking soda, and salt; stir into the creamed mixture until just blended.
Mix the oats and chocolate chips.
Drop by heaping spoonfuls onto an ungreased cookie sheet and bake for 12 minutes.

I must say, they turned out really well and they definitely satisfied my need for dessert. AND to top it all off, they are still on my diet! However, when you eat 25 are they still considered "diet" cookies? Probably not. Good think I've only had 2...........but I think I want another.

Can love be found on Reality Internet?

It's been awhile since I last blogged but since then I have learned a few things so I think that more than makes up for it. For starters, online dating is NOT my thing. I gave it a shot for a month, and kept an open mind, but it just wasn't for me. The type of person I am looking for is going to be out and about doing things and meeting people not sitting at home looking at girls profiles online sending "winks" or "flirts". No. The man I am looking for will actually be out DOING those things.

So...............my next great dating adventure is ........ drum roll please ................ The Mormon Bachelor. Yes that is a real show and yes they are on their fourth season. I heard about the show several years ago from my sister but I didn't think much of it until I saw a friend of mine post about it on Facebook. She said one of her best friends had recently been chosen to be the Mormon Bachelor and she gave the link to apply to date him. When I saw his picture, there was no turning back and I knew I had to apply. So I did my "research" and learned a little bit more about the show and about the bachelor, Kent Tuttle, whose heart practically every eligible mormon girl was vying for and I submitted my application. From my research I learned that Kent is a lot more than just a handsome face. He is a solid guy and I am excited to get to know him better and see if we have a connection.

Part of the auditon/application process was to make a youtube video describing who you are and why you should be on the show. Making that video was a lot of fun but it was also difficult at times. Putting yourself out there for the whole world to see (and judge) is kind of scary, but I did it. My video is pretty cheesy at times and a little nerdy but hey, that's me! Now that my video is out on the world wide web for everyone to see and the application deadline has passed, the next step is a Skype interview with the executive producer of the show and/or her crew. After the interview process, May 15th is the lucky day when I will find out  if I was chosen for a date with Kent or not. So until then.........

Single and Ready to Mingle





Ok, so I did something that I NEVER thought I would do. I actually used to say people who did this were crazy and probably socially challenged, but I'm not either so I guess I proved my own theory wrong. Anyway, I can't decide if this makes me desperate or just curious, but drum roll please.............I created an account on ldsmingle.com AND I paid $14.99 for a month subscription! Who am I!? So I've got a month to decide how I like this whole online dating thing. I guess Justin Beiber was right NEVER SAY NEVER. Wish me luck!!

How Do I Look!?

Am I Sexy Modest or What!?
So.............last night was crazy and I bought this headband. Who does that!? Who just buys a huge "head" band simply because the man that owns the store tells you it looks awesome. But let's be honest.......it does look awesome!

Ok, so this is how it happened. Shannon, Jordyn, Beth and I were out on the town looking for trouble like usual and we found it last night in American Fork at a little place called Sexy Modest Boutique. Yes, you heard me right, SEXY MODEST Boutique. With a name like that we had to go in and check it out. So we did and the minute we walked in, we were instantly friends with the store owner Jason. So................to make a long story short, we were in the store for over an hour just chattin' it up with our new best friend.

It was LEGEN............wait for it.........DARY! Anyway, over the course of the conversation, in between talking about our personal lives, movies and him guessing which one of us was the oldest (which by the way he was pretty darn good at) he, like all good salesmen, got each of us to buy something. You  might be saying, "Well Amie, that isn't too much of a stretch for you to go into a store and actually come out with something," and I would have to agree with you, but a freaking "head" band?! I say "head" band because this is a band that you wear across your forehead not over your hair like a normal headband, no this is different and me going for something different, that my friends is not something that happens everyday.

So, there you have it! That's my story. This is my new "head" band. What do you think!?
